Soul-Healing Ramen Inspired Soup



Today, I share with you a recipe that is close to my heart—a ramen-inspired dish that serves as a vessel for healing and comfort.


Let this meal be a ritual, a sacred act of preparing and consuming food that honors the temple that is your body. As you partake in this ramen, let it remind you that every meal is an opportunity to heal the body, mind, and soul.


Soul-Soothing Ramen Recipe

Ingredients:

  • 4 cups vegetable broth (or healing broth)

  • 1 can coconut milk

  • 2 cups spinach, washed and roughly chopped

  • 1 large onion, thinly sliced

  • 4 cloves garlic, minced

  • 1 cup mushrooms, sliced

  • 2 packets millet ramen noodles

  • Fresh cilantro, chopped, for garnish

  • 2 teaspoon cumin

  • 1 teaspoon turmeric

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Optional: chili flakes or hot sauce for an extra kick

Instructions:

  1. Prepare the Base:

    • In a large pot, heat a splash of oil over medium heat. Add the sliced onions and sauté until they begin to soften and turn translucent, about 3-5 minutes.

    • Add the minced garlic and sliced mushrooms, and cook for another 3 minutes until the mushrooms start to release their moisture and brown slightly.

  2. Spice it Up:

    • Sprinkle the cumin, turmeric, and paprika over the sautéed vegetables, stirring well to coat everything evenly. Allow the spices to cook for about a minute until they become fragrant

  3. Simmer the Broth:

    • Pour in the vegetable broth and can of coconut milk, stirring to combine all the elements into a harmonious blend. Bring the mixture to a gentle boil.

  4. Add the Greens:

    • Reduce heat to low and stir in the chopped spinach. Let it simmer gently, allowing the spinach to wilt but retain its vibrant color and nutrients.

  5. Cook the Noodles:

    • In a separate pot, cook the millet ramen noodles according to package instructions. Drain and rinse under cold water to stop the cooking process and remove excess starch.

  6. Combine and Serve:

    • Add the cooked noodles to the broth mixture, stirring gently to integrate. Taste and adjust seasoning with salt and pepper, and add chili flakes or hot sauce if using.

    • Serve the ramen hot, garnished with a generous sprinkle of fresh cilantro on top.


Cooking Tip: Keep the noodles and broth separate if you plan on having leftovers, to ensure the noodles don't absorb all the broth and become soggy.
